Apple Salsa

This is a recipe from way back, 2014, and it is such a great salsa for summer, for anytime really.

As you scoop this salsa into your mouth, savor the tantalizing sweet and spicy flavors that envelope the taste buds in every bite.  This delicious salsa has become my go to when attending get togethers with friends and family.


1 sweet onion, chopped
2-3 granny smith apples, peeled, cored, chopped (I use 3)
1 large tomato, chopped
about 1/2 cup chopped cilantro
2 tablespoons fresh lime juice – not stuff in container
1 jalapeno pepper, seeds removed and chopped
2 tablespoons honey
salt and pepper to taste

Chop chop till ya drop!



Mix all ingredients together and serve with chips or crackers (I personally prefer tortilla chips)

This is a re-post because I love these delightful little balls of decadence. They are the easiest and most enjoyed treats I make for get togethers, school/sports parties and just because, so give them a whirl and try to eat just one :)

Say What? Brownies

As you may have figured, I like to make treats for people and… maybe for me too ;) So I like to research ingredients that can be substituted for others to change things up with out sacrificing nutrition or flavor. I had used chickpeas in a “hummus dessert dip” last holiday season and thought, well shoot why not try making a baked treat with chickpeas! I have a couple brownie and cookie recipes that do not include flour, and I decided to give it a try substituting with the chickpeas. Chickpeas are a little underrated, they are a great source of fiber, carbs, calcium, iron, protein and vitamin A.  Between the hummus making and these brownies, they are kinda my new best friend right now. The kids asked what was in the brownies and when I said “chickpeas” they replied “say what?” , hence the name of the recipe :)
*side note, even though they tasted the same, kids favored the square shape over the muffin shape.
